What is a bresse egg and how is it different from a regular egg?

Here at Liberty Stone Farm we specialize in raising Bresse chickens. Bresse is a wonderful dual-purpose breed (eggs and meat) that originates from France. Although they can vary in color, traditional Bresse chickens are white with a red comb and wattles, and blue feet. Their meat is darker than a typical chicken you might find in the grocery store, with fat marbled throughout the meat like a fine steak. This gives the meat a rich, delicious flavor. But, the meat is not the only thing that makes this breed unique. The eggs produced by a Bresse hen have a larger yolk to white ratio than breeds that specialize in laying eggs. If you like a nice, big, orangey-yellow yolk - a Bresse chicken egg is for you!
